Lu Rou Fan
Taiwan's comfort bowl: pork belly braised in soy and five-spice until silky, spooned over rice.

Ingredients (for 2)
- Pork belly, 400 g, finely diced
- Shallots, 6, sliced
- Garlic, 3 cloves
- Soy sauce, 4 tbsp
- Rice wine or water, 60 ml
- Rock sugar or brown sugar, 1 tbsp
- Five-spice powder, 1/2 tsp
- Eggs, 2, boiled & peeled
- Cooked rice, 2 bowls
Steps
- Fry the shallots until golden and crisp; set half aside.
- Brown the pork belly, add garlic, then soy sauce, rice wine, sugar, five-spice and water to cover.
- Add the eggs and fried shallots and simmer gently for 45 minutes until glossy.
- Spoon over rice with a halved egg and some greens or pickled radish.
Cook it together: One of you dices the pork, the other fries the shallots โ then take turns minding the simmer.
