Malva Pudding
A spongy, caramelized apricot cake soaked in a warm buttery cream sauce — South Africa's favorite pudding.

Ingredients (for 2)
- Sugar, 150 g
- Egg, 1
- Apricot jam, 1 tbsp
- Flour, 150 g
- Baking soda, 1 tsp
- Milk, 150 ml
- Butter, 1 tbsp, melted
- White vinegar, 1 tsp
- For the sauce: cream 125 ml, butter 60 g, sugar 75 g, hot water 60 ml
Steps
- Heat the oven to 180°C and grease a small baking dish.
- Beat the sugar, egg and jam until pale, then fold in the flour and baking soda alternately with the milk.
- Stir in the melted butter and vinegar, pour into the dish and bake for 35–40 minutes until deep brown.
- Meanwhile warm the sauce ingredients until the butter and sugar melt.
- Pour the hot sauce over the hot pudding and let it soak in. Serve warm with custard or ice cream.
