Ingredients (for 2)
- Unsliced white loaf, 1 small
- Lamb or chicken, 500 g, in chunks
- Potatoes, 2, cubed
- Onion, 1, chopped
- Garlic & ginger, 1 tbsp each
- Curry powder or masala, 2 tbsp
- Tomatoes, 2, chopped
- Cinnamon stick, 1
- Curry leaves, a few (optional)
- Fresh coriander, to serve
Steps
- Fry the onion, cinnamon and curry leaves in oil until golden, then add the garlic, ginger and curry powder.
- Add the meat and brown it, then the tomatoes and 300 ml water; simmer covered for 40 minutes.
- Add the potatoes and cook 15β20 minutes more until tender and the sauce is thick.
- Cut the loaf in half, scoop out the middle of each half to make bread bowls, keeping the insides.
- Fill the bread with curry, put the bread 'lid' on top and eat with your hands.
Cook it together: One cooks the curry, the other hollows the bread β then eat it the proper way, no cutlery.
