Pastéis de Nata
Lisbon's famous custard tarts: flaky pastry cups with a creamy, blistered custard, dusted with cinnamon.

Ingredients (for 2)
- Puff pastry, 1 roll
- Milk, 250 ml
- Heavy cream, 100 ml
- Egg yolks, 4
- Sugar, 120 g
- Cornstarch, 2 tbsp
- Lemon peel, 1 strip, & cinnamon stick, 1
- Ground cinnamon & powdered sugar, to serve
Steps
- Roll the pastry into a tight log, slice into 12 rounds and press each into a muffin tin, thin at the bottom.
- Heat milk, cream, lemon peel and cinnamon stick; whisk the yolks, sugar and cornstarch, then whisk in the hot milk.
- Return to the pan and stir until just thickened; remove the peel and stick.
- Fill the pastry cups and bake at the hottest oven setting (250°C+) for 12–15 minutes until blistered; dust with cinnamon.
Cook it together: One of you presses the pastry cups, the other stirs the custard — whoever's patient enough gets to watch them blister.
