Mushroom Pierogi
Tender Polish dumplings filled with mushrooms, onion and potato, pan-fried golden and topped with caramelized onions.

Ingredients (for 2)
- All-purpose flour, 300 g
- Warm water, 150 ml
- Egg, 1
- Butter or oil, 2 tbsp, for the dough
- Mushrooms, 300 g, finely chopped
- Potatoes, 2, boiled and mashed
- Onions, 2
- Sour cream & chives, to serve
Steps
- Knead flour, egg, water, fat and a pinch of salt into a smooth dough; rest 30 minutes.
- Fry one chopped onion with the mushrooms until dry and browned; mix with the mashed potato and season well.
- Roll the dough thin, cut 8 cm circles, fill, fold and pinch the edges tightly.
- Boil in batches until they float plus 2 minutes, then pan-fry in butter with the second onion, sliced, until golden.
