Stroopwafels
Thin, crisp Dutch waffle cookies sandwiched with warm caramel syrup — best balanced on top of a hot drink.

Ingredients (for 2)
- All-purpose flour, 250 g
- Butter, 125 g, melted
- Sugar, 75 g
- Milk, 60 ml, lukewarm
- Instant yeast, 1 tsp
- Egg, 1
- Brown sugar, 150 g, for the filling
- Butter, 60 g, for the filling
- Golden syrup, 2 tbsp
- Cinnamon, 1 tsp
Steps
- Mix the flour, butter, sugar, milk, yeast and egg into a soft dough; let it rest for 45 minutes.
- For the filling, melt the brown sugar, butter, syrup and cinnamon together and keep it warm.
- Roll the dough into walnut-sized balls and press each one in a hot pizzelle or waffle-cone iron for about 1 minute.
- While still hot, cut each waffle in half horizontally with a sharp knife.
- Spread with warm caramel and press the halves back together.
Cook it together: One of you works the iron, the other splits the hot waffles and spreads the caramel — fast teamwork wins.
