Bitterballen
Crunchy Dutch bar snacks with a creamy beef ragout inside, served piping hot with mustard.

Ingredients (for 2)
- Beef stock, 400 ml
- Cooked beef, 200 g, finely shredded
- Butter, 50 g
- All-purpose flour, 60 g
- Onion, ½, finely chopped
- Parsley, 1 tbsp, chopped
- Nutmeg, a pinch
- Eggs, 2, beaten
- Breadcrumbs, 100 g
- Oil for frying
- Mustard, to serve
Steps
- Soften the onion in butter, stir in the flour and cook for 2 minutes.
- Whisk in the stock and cook to a thick ragout; add the beef, parsley, nutmeg and salt.
- Spread in a dish, cover and chill for at least 1 hour until firm.
- Roll into small balls, dip in egg and breadcrumbs (twice for extra crunch).
- Fry at 180°C for 3–4 minutes until deep golden; serve with mustard.
