Khinkali
Big, twisted Georgian soup dumplings filled with spiced meat and juicy broth. Hold by the knot, bite, slurp, then eat.

Ingredients (for 2)
- All-purpose flour, 350 g
- Water, 170 ml
- Ground beef, 250 g
- Ground pork, 150 g
- Onion, 1, grated
- Cilantro, a handful, finely chopped
- Ground cumin, 1 tsp
- Chili flakes, ยฝ tsp
- Cold water, 100 ml, for the filling
- Black pepper, to serve
Steps
- Knead the flour, water and a pinch of salt into a firm dough; rest for 30 minutes.
- Mix the meats, onion, cilantro, cumin, chili and salt, then gradually work in the cold water until very juicy.
- Roll the dough and cut 10 cm circles; put a spoon of filling in each.
- Pleat the edges up around the filling and twist into a knot on top.
- Boil in salted water for 10โ12 minutes. Dust with black pepper and eat by hand, sipping the broth first.
