Adjaruli Khachapuri
Georgia's famous boat-shaped cheese bread, filled with molten cheese and crowned with an egg yolk and butter.

Ingredients (for 2)
- Bread flour, 300 g
- Warm milk, 180 ml
- Instant yeast, 1 tsp
- Sugar, 1 tsp
- Oil, 1 tbsp
- Mozzarella, 200 g, grated
- Feta, 150 g, crumbled
- Egg yolks, 2
- Butter, 30 g
Steps
- Knead the flour, milk, yeast, sugar, oil and a pinch of salt into a soft dough; rise for 45 minutes.
- Divide in two, roll each into an oval and roll up the long sides to form a boat, pinching the ends.
- Mix the cheeses and fill each boat generously.
- Bake at 230°C for 12–15 minutes until golden.
- Drop an egg yolk and a knob of butter into each, bake 1 minute more, then stir it all together at the table and tear off the crust to dip.
Cook it together: One of you shapes the boats, the other mixes the cheese — then stir the yolk in together at the table.
