Imeruli Khachapuri
The everyday Georgian cheese bread: a round, golden flatbread with a salty, melty cheese filling, cut into wedges.

Ingredients (for 2)
- Bread flour, 300 g
- Plain yogurt, 200 g
- Baking soda, ½ tsp
- Egg, 1
- Butter, 30 g, melted
- Mozzarella, 200 g, grated
- Feta, 150 g, crumbled
Steps
- Mix the flour, yogurt, baking soda, half the egg and a pinch of salt into a soft dough; rest 20 minutes.
- Mix the cheeses with the rest of the egg and roll into a ball.
- Flatten the dough into a circle, put the cheese ball in the center and gather the edges over it to seal.
- Gently press and roll into a flat round about 1 cm thick.
- Cook in a dry covered pan for 5–6 minutes per side (or bake at 220°C for 15 minutes); brush with butter and cut into wedges.
Cook it together: One of you makes the dough, the other the cheese ball — then flatten it together without letting the cheese escape.
