Patacones with Hogao
Twice-fried green plantain coins, smashed flat and crispy, served with hogao, a warm tomato and spring onion salsa.

Ingredients (for 2)
- Green plantains, 2
- Vegetable oil, for frying
- Salt, to taste
- Tomatoes, 2, finely chopped
- Spring onions, 3, chopped
- Garlic, 1 clove, minced
- Ground cumin, a pinch
Steps
- Peel the plantains and cut them into 3 cm pieces.
- Fry at about 160°C for 4–5 minutes until soft but not browned, then drain.
- Smash each piece flat between two plates or pieces of baking paper.
- Fry again at 190°C until golden and crisp, then salt immediately.
- For the hogao, cook the tomatoes, spring onions, garlic and cumin in a little oil for 10 minutes until saucy.
Cook it together: One smashes, the other fries — the hogao simmers away while you work.
