Arepas con Queso
Golden griddled corn cakes, crisp outside and soft inside — Colombia's everyday bread, filled with melting cheese.

Ingredients (for 2)
- Pre-cooked white cornmeal (masarepa), 1 cup
- Warm water, 1¼ cups
- Salt, ½ tsp
- Butter, 1 tbsp, softened
- Mozzarella or queso blanco, 100 g, grated
- Butter, to serve
Steps
- Mix the masarepa and salt, pour in the warm water and stir, then knead in the butter until smooth. Rest for 5 minutes.
- Divide into 4 balls and flatten each into a disc about 1.5 cm thick.
- Cook on a lightly oiled griddle over medium heat for 6–8 minutes per side, until crusted and spotty brown.
- Split each arepa open, stuff with the cheese and return to the pan for a minute to melt.
- Serve hot with a little butter on top.
