Bandeja Paisa
A generous Medellín-style platter of red beans, rice, seared steak, crispy pork belly, fried egg, arepa, plantain and avocado.

Ingredients (for 2)
- Red kidney beans, 1 can (400 g)
- Pork belly, 200 g
- Thin beef steak, 200 g
- Rice, 1 cup
- Eggs, 2
- Ripe plantain, 1
- Avocado, 1
- Onion & tomato, 1 each, chopped
- Ground cumin, ½ tsp
- Arepas, 2 (store-bought or homemade)
Steps
- Cook the rice. Simmer the beans with half the onion and tomato, the cumin and a splash of water for 20 minutes.
- Cut the pork belly into strips and fry slowly for 20–25 minutes until crisp and golden.
- Season the steak and sear it for 1–2 minutes per side; slice the plantain and fry until caramelized.
- Fry the eggs and warm the arepas.
- Arrange everything on two big plates with sliced avocado and the remaining fresh onion and tomato.
Cook it together: Divide the stations — one on beans, rice and eggs, the other on pork, steak and plantain — and plate up together.
