Poutine
Crispy fries smothered in rich gravy and squeaky cheese curds — Québec's favorite comfort food.

Ingredients (for 2)
- Russet potatoes, 3 large
- Vegetable oil, for frying
- Cheese curds (or torn fresh mozzarella), 150 g
- Butter, 2 tbsp
- Flour, 2 tbsp
- Beef stock, 400 ml
- Worcestershire sauce, 1 tsp
- Black pepper, to taste
Steps
- Cut the potatoes into thick fries, rinse well and pat completely dry.
- Fry at 160°C for 5 minutes, drain, then fry again at 190°C until deep golden and crisp.
- Meanwhile melt the butter, whisk in the flour and cook for 2 minutes until lightly browned.
- Whisk in the stock and Worcestershire sauce and simmer until glossy and thick; season with pepper.
- Pile the hot fries into bowls, scatter over the curds and pour the hot gravy on top so the cheese just starts to melt.
