Butter Tarts
Flaky little pastry cups filled with a gooey brown-sugar and butter filling — a Canadian bake-sale classic.

Ingredients (for 2)
- Shortcrust pastry, 1 sheet (about 320 g)
- Brown sugar, 100 g
- Butter, 50 g, melted
- Maple or golden syrup, 60 ml
- Egg, 1
- Vanilla extract, 1 tsp
- White vinegar, ½ tsp
- Raisins or pecans, 40 g (optional)
- Salt, a pinch
Steps
- Heat the oven to 200°C. Cut the pastry into 12 rounds and press them into a muffin tin.
- Whisk the sugar, melted butter, syrup, egg, vanilla, vinegar and salt until smooth.
- Drop a few raisins or pecans into each pastry cup, then fill each two-thirds full.
- Bake for 15–18 minutes, until the pastry is golden and the filling is bubbling but still slightly wobbly.
- Cool in the tin for 10 minutes — the filling sets as it cools.
Cook it together: One cuts and presses the pastry cups, the other whisks the filling — then fill them side by side.
