Maple-Glazed Salmon
Salmon brushed with a sticky maple, soy and mustard glaze and roasted until just flaky.

Ingredients (for 2)
- Salmon fillets or steaks, 2 (about 150 g each)
- Pure maple syrup, 3 tbsp
- Soy sauce, 1 tbsp
- Dijon mustard, 1 tsp
- Garlic, 1 clove, grated
- Green beans or asparagus, 200 g
- Olive oil, 1 tbsp
- Lemon, ½
Steps
- Heat the oven to 200°C and line a tray with baking paper.
- Whisk the maple syrup, soy sauce, mustard and garlic together.
- Put the salmon and vegetables on the tray, drizzle the vegetables with oil and brush the salmon with half the glaze.
- Roast for 10–12 minutes, brushing on the rest of the glaze halfway, until the salmon flakes easily.
- Squeeze over the lemon and serve straight from the tray.
