Ingredients (for 2)
- All-purpose flour, 250 g
- Dark brown sugar, 150 g
- Butter, 125 g, soft
- Egg, 1
- Cinnamon, 2 tsp
- Ground ginger, nutmeg & cloves, 1/2 tsp each
- Baking soda, 1/2 tsp
- Milk, 1 tbsp
Steps
- Cream the butter and brown sugar, then beat in the egg and milk.
- Mix in flour, spices, baking soda and a pinch of salt; chill the dough 30 minutes.
- Roll 4 mm thick and cut into rectangles or shapes.
- Bake at 180°C for 10–12 minutes until deep brown at the edges; cool on a rack to crisp.
