Moules-Frites
Belgium's national dish: a pot of mussels steamed with shallots, celery and herbs, served with crisp fries.

Ingredients (for 2)
- Fresh mussels, 1.5 kg, cleaned
- Shallots, 2
- Celery, 2 stalks
- Garlic, 2 cloves
- Butter, 30 g
- Fish or vegetable stock, 200 ml
- Parsley, chopped
- Potatoes, 800 g, for fries
- Oil for frying & mayonnaise, to serve
Steps
- Cut the potatoes into fries, fry at 160°C for 5 minutes, drain and rest.
- Soften the shallots, celery and garlic in butter in a large pot.
- Add the mussels and stock, cover and steam 5–6 minutes, shaking the pot, until they open (discard any that stay shut).
- Fry the fries again at 190°C until crisp; serve the mussels with parsley, fries and mayo.
Cook it together: One of you handles the double-fried fries, the other steams the mussels — use an empty shell as your tongs.
