Steps

  1. Knead the flour, egg, water and a pinch of salt into a firm dough; rest for 30 minutes.
  2. Mix the meat, onions, cumin, pepper, salt and 2 tbsp cold water.
  3. Roll the dough thin and cut into 10 cm squares; add a spoonful of filling and a piece of butter to each.
  4. Pinch opposite corners together, then join the remaining corners to make little envelopes.
  5. Steam on oiled steamer racks for 35–40 minutes and serve with yogurt and dill.
