Scones with Jam & Cream
Tall, tender scones split warm and piled with jam and clotted cream — a proper cream tea.

Ingredients (for 2)
- Self-raising flour, 350 g
- Butter, cold, 85 g
- Sugar, 3 tbsp
- Milk, 175 ml
- Lemon juice, 1 tsp
- Egg, 1, for glazing
- Strawberry jam & clotted cream, to serve
Steps
- Rub the butter into the flour and sugar until it looks like breadcrumbs.
- Warm the milk slightly, add lemon juice, and stir into the flour to make a soft dough — don't overwork it.
- Pat out 4 cm thick, cut rounds with a floured cutter and brush with egg.
- Bake at 220°C for 10–12 minutes until risen and golden; serve warm with jam and cream.
