Lahmacun
Paper-thin flatbreads spread with spiced minced meat, finished with parsley and lemon.

Ingredients (for 2)
- All-purpose flour, 250 g
- Warm water, 150 ml
- Instant yeast, 1 tsp
- Ground lamb or beef, 200 g
- Onion, 1/2, grated
- Tomato, 1, grated
- Red pepper paste or tomato paste, 1 tbsp
- Paprika & cumin, 1 tsp each
- Parsley & lemon, to serve
Steps
- Mix flour, water, yeast and a pinch of salt into a soft dough; rest 20 minutes.
- Mix the meat with onion, tomato, pepper paste, spices and salt into a spreadable paste.
- Roll the dough into very thin rounds and spread a thin layer of topping right to the edges.
- Bake on the hottest oven setting for 6β8 minutes; top with parsley, squeeze over lemon and roll up to eat.
Cook it together: One of you rolls the dough thin, the other spreads the topping β then take turns pulling them from the oven.
