Senegal's national dish: fish stuffed with a parsley-garlic paste, simmered with vegetables in tomato sauce, with the rice cooked in the same broth.

Ingredients (for 2)
- White fish fillets or steaks, 500 g
- Parsley, 1 bunch
- Garlic, 3 cloves
- Scotch bonnet chili, 1
- Onion, 1, chopped
- Tomato paste, 3 tbsp
- Carrot, 1, cut in chunks
- Cabbage, 200 g, in wedges
- Eggplant, 1 small, halved
- Broken rice or jasmine rice, 250 g
Steps
- Blend the parsley, garlic, chili and a pinch of salt; cut slits in the fish and stuff them with the paste.
- Fry the onion in oil, add the tomato paste and cook for 5 minutes, then add 1 litre water.
- Simmer the vegetables in the sauce for 20 minutes, add the fish and cook 15 minutes more.
- Lift out the fish and vegetables; cook the rice in the remaining broth, covered, for 20 minutes.
- Serve the red rice on a big platter with the fish and vegetables on top.
