A rich, comforting West African stew of beef and vegetables in a peanut and tomato sauce.

Ingredients (for 2)
- Beef chuck, 500 g, cubed
- Onion, 1, chopped
- Garlic, 2 cloves
- Tomato paste, 2 tbsp
- Smooth peanut butter, 120 g
- Carrots, 2, in chunks
- Sweet potato, 1, in chunks
- Scotch bonnet chili, 1, whole
- Beef stock, 600 ml
- Rice, to serve
Steps
- Brown the beef in oil, then add the onion and garlic and cook until soft.
- Stir in the tomato paste, then whisk the peanut butter into the stock and pour it in.
- Add the whole chili and simmer covered for 40 minutes, stirring now and then so it doesn't catch.
- Add the carrots and sweet potato and cook 20 minutes more until tender.
- Remove the chili and serve over rice.
