Ube Cake
A soft, violet-purple cake flavored with ube, the Filipino purple yam, and finished with ube frosting.

Ingredients (for 2)
- All-purpose flour, 200 g
- Sugar, 180 g
- Eggs, 3
- Milk, 180 ml
- Vegetable oil, 80 ml
- Baking powder, 2 tsp
- Ube halaya (jam), 200 g
- Ube extract, 1 tsp
- Cream cheese, 150 g, & butter, 60 g, for frosting
Steps
- Whisk eggs and sugar until pale, then mix in oil, milk, half the ube halaya and the ube extract.
- Fold in flour, baking powder and a pinch of salt.
- Bake in a lined 20 cm tin at 170°C for 35–40 minutes; cool completely.
- Beat cream cheese, butter, the rest of the ube halaya and a little powdered sugar; spread over the cake.
Cook it together: One of you makes the batter, the other beats the frosting — then decorate it together once it's cool.
