Pork Adobo
The Philippines' best-loved braise: pork belly simmered in vinegar, soy, garlic and bay leaves, with eggs soaking up the glossy sauce.

Ingredients (for 2)
- Pork belly, 600 g, cut in chunks
- Soy sauce, 80 ml
- Cane or white vinegar, 80 ml
- Garlic, 1 whole head, crushed
- Bay leaves, 3
- Whole black peppercorns, 1 tsp
- Brown sugar, 1 tbsp
- Eggs, 4, hard-boiled and peeled
- Steamed rice, to serve
Steps
- Put the pork, soy sauce, garlic, bay leaves and peppercorns in a pot and marinate for 15 minutes.
- Add the vinegar and 250 ml water, bring to a boil and don't stir for the first few minutes so the vinegar mellows.
- Simmer covered for 40 minutes until the pork is tender, then add the eggs and sugar.
- Uncover and cook until the sauce is reduced and glossy; serve over plenty of rice.
