Ceviche

Ingredients (for 2)
- Very fresh white fish (sea bass or sole), 300 g
- Limes, 6–8
- Red onion, 1/2, thinly sliced
- Chili (ají or jalapeño), 1
- Cilantro, a handful
- Sweet potato, 1, boiled
- Corn on the cob, 1, boiled
- Salt
Steps
- Cut the fish into bite-size cubes and keep it very cold.
- Rinse the sliced onion in cold water; finely chop chili and cilantro.
- Toss the fish with salt, chili and freshly squeezed lime juice; rest 3–5 minutes until just opaque.
- Fold in onion and cilantro and serve at once with sweet potato slices and corn.
Cook it together: One of you squeezes limes (a lot of them!), the other cuts the fish — then plate it together fast.
