Efo Riro with Fufu
A rich Yoruba spinach stew with peppers and palm oil, eaten with soft, stretchy fufu.

Ingredients (for 2)
- Spinach, 500 g
- Red bell peppers, 2
- Scotch bonnet, 1
- Onion, 1
- Palm oil or vegetable oil, 4 tbsp
- Beef or smoked fish, 300 g
- Stock cube & salt
- Fufu flour or instant pounded yam, 2 cups
Steps
- Blend the peppers, scotch bonnet and half the onion into a coarse paste.
- Fry the remaining onion in palm oil, add the pepper paste and cook down 15 minutes; add the meat or fish and stock.
- Stir in the chopped spinach and cook 3โ5 minutes until just wilted.
- Make the fufu with boiling water, stirring hard until smooth and stretchy; serve alongside.
Cook it together: One of you cooks the stew, the other stirs the fufu โ it needs strong arms, so take turns.
