  1. Soak the bulgur in a little lemon juice and water for 10 minutes.
  2. Wash and dry the herbs well, then chop them finely with a sharp knife.
  3. Finely dice the tomatoes and slice the spring onions.
  4. Toss everything with lemon juice, olive oil, salt and a pinch of allspice; serve right away.
