Mandazi
East African fried dough, lightly sweet with coconut milk and cardamom — perfect with a cup of spiced chai.

Ingredients (for 2)
- All-purpose flour, 300 g
- Coconut milk, 150 ml
- Sugar, 60 g
- Instant yeast, 1 tsp
- Egg, 1
- Ground cardamom, 1 tsp
- Butter, 20 g, melted
- Oil for frying
Steps
- Mix the flour, sugar, yeast, cardamom and a pinch of salt.
- Add the coconut milk, egg and butter and knead into a smooth, soft dough.
- Cover and let it rest for 45 minutes.
- Roll out 1 cm thick and cut into triangles.
- Fry at 175°C, turning, until puffed and golden. Serve warm with tea.
