Kenyan Pilau
Swahili-coast spiced rice cooked with beef, cumin, cardamom, cinnamon and cloves until fragrant and brown.

Ingredients (for 2)
- Basmati rice, 300 g, rinsed
- Beef, 400 g, cubed
- Onions, 2, sliced
- Garlic, 3 cloves
- Ginger, 1 tbsp, grated
- Cumin seeds, 1 tsp
- Cardamom pods, 4
- Cinnamon stick, 1
- Whole cloves, 4
- Black peppercorns, 1 tsp
- Beef stock, 600 ml
Steps
- Simmer the beef in the stock for 30 minutes until tender; keep the stock.
- Fry the onions slowly until deep brown โ this gives pilau its color.
- Add the whole spices, garlic and ginger and fry for 1 minute until fragrant.
- Add the beef and rice, stir to coat, then pour in 550 ml of the hot stock.
- Cover and cook on low for 18โ20 minutes; rest 5 minutes and fluff. Serve with kachumbari.
