Brown Stew Fish with Rice & Peas
Fried fish simmered in a savory brown sauce with peppers, served with coconut rice and kidney beans.

Ingredients (for 2)
- White fish fillets or whole snapper, 500 g
- Onion & bell pepper, 1 each
- Scotch bonnet, 1/2
- Garlic & thyme
- Browning or soy sauce, 1 tbsp
- Ketchup, 2 tbsp
- Rice, 1.5 cups
- Coconut milk, 1 can & kidney beans, 1 can
Steps
- Simmer rice with coconut milk, drained kidney beans, thyme and water until fluffy (rice and peas).
- Season the fish with salt and pepper and fry until golden; set aside.
- In the same pan soften onion, pepper, garlic and scotch bonnet; add browning, ketchup and a little water.
- Return the fish, spoon the sauce over and simmer 5 minutes; serve with the rice and peas.
Cook it together: One of you makes the rice and peas, the other fries the fish and builds the sauce.
