Ackee & Saltfish
Jamaica's national dish: buttery ackee sautéed with salt cod, peppers and onion, served with fried dumplings.

Ingredients (for 2)
- Canned ackee, 1 can, drained
- Salt cod, 200 g, soaked overnight
- Onion, 1
- Bell pepper, 1
- Scotch bonnet, 1/2
- Tomato, 1
- Thyme & black pepper
- Fried dumplings or bread, to serve
Steps
- Boil the soaked salt cod 10 minutes, drain and flake.
- Sauté onion, pepper, scotch bonnet, tomato and thyme until soft.
- Add the flaked fish, then fold in the ackee very gently so it stays in pieces.
- Season with black pepper and serve with fried dumplings.
Cook it together: One of you flakes the fish, the other chops the vegetables — fold in the ackee together, gently.
