Goulash
Hungary's iconic beef soup, rich with sweet paprika, onions, peppers and potatoes — traditionally simmered in a cauldron.

Ingredients (for 2)
- Beef chuck, 500 g, cubed
- Onions, 2, chopped
- Sweet Hungarian paprika, 2 tbsp
- Caraway seeds, 1 tsp
- Garlic, 2 cloves
- Tomato, 1, chopped
- Green pepper, 1, sliced
- Carrots, 2, sliced
- Potatoes, 2, cubed
- Lard or oil, 2 tbsp
Steps
- Soften the onions slowly in lard for 10 minutes.
- Take the pot off the heat, stir in the paprika (it burns easily), then add the beef, caraway, garlic and salt.
- Brown the beef, then add 1 litre water and simmer covered for 75 minutes.
- Add the tomato, pepper, carrots and potatoes and simmer 25 minutes more.
- Serve in deep bowls with crusty bread and hot paprika on the side.
