Ingredients (for 2)
- Lamb or beef, 400 g, cut in small cubes
- Onion, 1, sliced
- Garlic, 2 cloves
- Jalapeño or green chili, 1, sliced
- Fresh rosemary, 1 sprig
- Niter kibbeh or butter, 2 tbsp
- Berbere or mitmita, 1 tsp (optional)
- Tomato, 1, chopped
- Injera or flatbread, to serve
Steps
- Heat a heavy pan until very hot and sear the meat in batches until browned.
- Add the onion and cook for 3 minutes until slightly soft.
- Stir in the butter, garlic, rosemary, chili, tomato and spice and toss for 2–3 minutes.
- Season with salt and take off the heat while the meat is still juicy.
- Serve straight from the pan with injera.
