Misir Wat
Silky red lentils stewed with onion, garlic and berbere — a vegan staple of the Ethiopian table.

Ingredients (for 2)
- Red lentils, 200 g
- Red onions, 2, finely chopped
- Garlic, 3 cloves
- Ginger, 2 cm piece
- Berbere spice, 2 tbsp
- Tomato paste, 1 tbsp
- Vegetable oil, 4 tbsp
- Water or stock, 700 ml
- Injera or flatbread, to serve
Steps
- Cook the onions in the oil over medium heat for 10 minutes until soft and golden.
- Add the garlic, ginger, berbere and tomato paste and stir for 2 minutes.
- Add the rinsed lentils and water, and simmer for 25 minutes, stirring now and then, until thick and creamy.
- Season with salt and loosen with a little water if needed.
- Serve with injera and a simple salad or sautéed greens.
