  1. Whisk the egg yolks, milk, flour, vanilla and a pinch of salt into a smooth batter.
  2. Beat the egg whites with the sugar to stiff peaks and fold them in gently.
  3. Melt half the butter in a large pan, pour in the batter, scatter the raisins and cook until the bottom is golden.
  4. Flip in pieces, then tear it into bite-sized chunks with two forks.
  5. Add the rest of the butter and a spoon of sugar and toss until caramelized; serve with powdered sugar and compote.
