Apfelstrudel
Austrian apple strudel: tart apples, raisins and cinnamon rolled in paper-thin pastry and baked until crisp.

Ingredients (for 2)
- Filo pastry, 6 sheets
- Apples, 4, peeled and thinly sliced
- Raisins, 40 g
- Sugar, 60 g
- Cinnamon, 1 tsp
- Lemon, ½, juiced
- Breadcrumbs, 50 g
- Butter, 80 g, melted
- Powdered sugar & whipped cream, to serve
Steps
- Toast the breadcrumbs in 20 g butter until golden.
- Mix the apples, raisins, sugar, cinnamon and lemon juice.
- Layer the filo sheets on a clean towel, brushing each with butter, then scatter the breadcrumbs over the bottom half.
- Spread the apples on the crumbs, then use the towel to roll it up tightly and slide it onto a lined tray.
- Brush with butter and bake at 190°C for 35–40 minutes. Dust with powdered sugar and serve warm with cream.
