Pilau
Swahili-coast spiced rice cooked with chicken, cumin, cardamom and cloves until fragrant and golden brown.

Ingredients (for 2)
- Basmati rice, 1ยฝ cups
- Chicken pieces, 500 g
- Onions, 2, sliced
- Garlic & ginger, 1 tbsp each
- Pilau masala (or cumin, cardamom, cloves, cinnamon, black pepper), 2 tsp
- Potato, 1, cubed (optional)
- Chicken stock, 700 ml
- Oil, 3 tbsp
- Kachumbari salad, to serve
Steps
- Soak the rice for 20 minutes and drain.
- Fry the onions slowly in oil until deep brown โ this gives pilau its color.
- Add the garlic, ginger and spices, then the chicken, and brown it.
- Add the potato, rice and stock, bring to a boil, then cover and cook on low for 20 minutes.
- Fluff and serve with kachumbari and grilled meat or banana.
Cook it together: One browns the onions (low and slow), the other preps the chicken and salad.
