Ingredients (for 2)

Steps

  1. Mix the pork and shrimp with a splash of soy sauce, a few drops of sesame oil and white pepper.
  2. Put a teaspoon of filling in each wrapper, wet the edges and fold into little parcels.
  3. Boil the wontons for 3–4 minutes until they float, then blanch the greens in the same water.
  4. Cook the noodles for about 1 minute, rinse under cold water, then dip back into hot water and drain.
  5. Toss the noodles with the oyster sauce, soy sauce and sesame oil, and top with the wontons, greens, fried shallots and pickled chilies.
Cook it together: Sit side by side folding wontons, then one cooks the noodles while the other boils the wontons and greens.
