Chapli Kabab
Flat, crispy-edged spiced beef patties from Peshawar, packed with tomato, onion, coriander and crushed spices.

Ingredients (for 2)
- Minced beef, 400 g
- Onion, 1, finely chopped
- Tomato, 1, finely chopped
- Green chilies, 2, chopped
- Fresh coriander, a handful
- Egg, 1
- Cornflour, 2 tbsp
- Crushed coriander seeds, 1 tbsp
- Chili flakes & cumin, 1 tsp each
- Pomegranate seeds (anardana), 1 tsp (optional)
- Oil, for shallow frying
Steps
- Squeeze excess juice from the chopped tomato and onion.
- Mix everything except the oil into the beef with a pinch of salt.
- Shape into thin, wide patties with wet hands.
- Shallow-fry for 3โ4 minutes per side until crisp and well browned.
- Serve with naan, sliced onion, lemon and a yogurt chutney.
