Lamb Chops with Mint Sauce

Ingredients (for 2)
- Lamb chops or cutlets, 6
- Garlic, 2 cloves
- Fresh rosemary, 2 sprigs
- Olive oil, 2 tbsp
- Fresh mint, 1 bunch
- Sugar, 1 tbsp
- Boiling water, 2 tbsp
- Malt or cider vinegar, 3 tbsp
- Salt & pepper, to taste
Steps
- Finely chop the mint, stir in the sugar and boiling water until dissolved, then add the vinegar and leave to infuse.
- Rub the lamb with the oil, crushed garlic, chopped rosemary, salt and pepper.
- Sear in a very hot heavy pan for 3–4 minutes per side for pink, then rest for 5 minutes.
- Serve with the mint sauce and roast potatoes or a green salad.
