Nepal's favorite dumplings: juicy spiced chicken wrapped in thin dough, steamed and dunked in a tangy tomato–sesame achar.

Ingredients (for 2)
- Flour, 200 g
- Water, about 110 ml
- Minced chicken, 250 g
- Onion, 1 small, finely chopped
- Garlic & ginger, 1 tbsp each, minced
- Fresh coriander, a handful, chopped
- Ground cumin & coriander, ½ tsp each
- Tomatoes, 2
- Toasted sesame seeds, 2 tbsp
- Dried red chilies, 2
- Lemon juice, 1 tbsp
Steps
- Knead the flour and water into a smooth, firm dough; cover and rest for 20 minutes.
- Mix the chicken, onion, garlic, ginger, coriander, spices and a pinch of salt with 2 tbsp water until sticky.
- Roll small pieces of dough into thin 8 cm circles, add a spoonful of filling and pleat closed into little purses.
- Steam on an oiled steamer for 10–12 minutes until the dough turns slightly translucent.
- For the achar, char the tomatoes and chilies in a dry pan, then blend with the sesame, lemon juice and salt.
Cook it together: Set up a little assembly line — one rolls the wrappers, the other fills and pleats. Ugly momos taste just as good.
