Ingredients (for 2)

Steps

  1. Toast the raw rice in a dry pan until deep golden, then grind into a coarse powder.
  2. Cook the chicken in a pan with a splash of water, breaking it up, until just cooked through.
  3. Take off the heat and stir in the shallots, lime juice, fish sauce and chili flakes.
  4. Fold in the herbs and toasted rice powder.
  5. Serve with cabbage wedges, lettuce, cucumber and sticky rice.
Cook it together: One toasts and grinds the rice (the smell is amazing), the other cooks the chicken and tears the herbs.
