Steps

  1. Salt the eggplant slices for 20 minutes, pat dry and fry until deep golden on both sides.
  2. Fry the onion with turmeric, brown the lamb, then stir in the tomato paste.
  3. Add 500 ml water and simmer covered for 60 minutes until the lamb is tender.
  4. Lay the eggplant and tomato halves on top, add the saffron and lime juice, and simmer 20 minutes more without stirring.
  5. Serve with saffron rice and plain yogurt.
