Lovo-Style Roast
Inspired by Fiji's earth-oven feast: chicken, taro and sweet potato wrapped in leaves and slow-cooked with coconut cream.

Ingredients (for 2)
- Chicken thighs, 4
- Sweet potato, 1, in chunks
- Taro or potatoes, 2, in chunks
- Coconut cream, 200 ml
- Onion, 1, sliced
- Garlic & ginger, 1 tbsp each
- Banana leaves or foil, for wrapping
- Salt & pepper
Steps
- Heat the oven to 180°C (or prepare a covered barbecue).
- Season the chicken with garlic, ginger, salt and pepper.
- Lay banana leaves (or foil) in a roasting dish, add the chicken, root vegetables and onion, and pour over the coconut cream.
- Wrap tightly and roast for 1½ hours until everything is tender and smoky-sweet.
- Unwrap at the table and share.
Cook it together: Wrap the parcels together — the unwrapping at the table is the fun part. (A real lovo is cooked in an earth oven with hot stones.)
