Steps

  1. Simmer the sugar and water for 6 minutes, add the lemon juice and rose water, and let it cool.
  2. Heat the oven to 180°C. Pull the kataifi apart and toss it with the melted butter.
  3. Twist small handfuls into nests in a muffin tin, pressing a dip into the middle of each.
  4. Bake for 20–25 minutes, until crisp and golden.
  5. Fill each nest with cream, spoon over the syrup and top with pistachios.
