Sancocho
The Dominican Republic's beloved celebration stew, thick with meats, plantain, yuca, corn and root vegetables.

Ingredients (for 2)
- Chicken thighs, 4
- Beef, 300 g, cubed
- Green plantain, 1, in chunks
- Yuca, 300 g, in chunks
- Corn on the cob, 1, cut in rounds
- Potato, 1, cubed
- Onion, 1, chopped
- Garlic, 3 cloves
- Cilantro, a handful
- Oregano, 1 tsp
- Lime, 1
Steps
- Season the chicken and beef with garlic, oregano, lime juice and salt.
- Brown the meats in a large pot, add the onion and 1.5 litres water, and simmer for 40 minutes.
- Add the yuca, plantain and corn and cook for 20 minutes.
- Add the potato and cook until the stew thickens and the vegetables are soft.
- Stir in chopped cilantro and serve with white rice and avocado.
Cook it together: One of you peels the plantain and yuca (they're stubborn!), the other seasons and browns the meat.
