Fluffy Danish pancake balls cooked in a special round pan, dusted with powdered sugar and dipped in jam.

Ingredients (for 2)
- All-purpose flour, 200 g
- Buttermilk, 300 ml
- Eggs, 2, separated
- Sugar, 1 tbsp
- Baking powder, 1 tsp
- Cardamom, ½ tsp
- Lemon zest, 1 tsp
- Butter, for the pan
- Powdered sugar & jam, to serve
Steps
- Whisk the flour, sugar, baking powder, cardamom, zest and a pinch of salt with the buttermilk and egg yolks.
- Beat the egg whites to stiff peaks and fold them in.
- Heat an æbleskiver pan and put a little butter in each hole.
- Fill the holes, and as the edges set, turn each ball a quarter-turn with a skewer; keep turning until round and golden.
- Serve hot with powdered sugar and jam for dipping.
