Ropa Vieja
Cuba's national dish: tender shredded beef braised with peppers, onion and tomato, served with rice, black beans and plantains.

Ingredients (for 2)
- Beef flank or chuck, 500 g
- Onion, 1, sliced
- Red & green peppers, 1 each, sliced
- Garlic, 4 cloves
- Tomato passata, 300 g
- Ground cumin, 1 tsp
- Dried oregano, 1 tsp
- Bay leaf, 1
- Green olives, a handful (optional)
- Beef stock, 500 ml
Steps
- Simmer the beef in the stock with the bay leaf for about 1½ hours, until it pulls apart easily.
- Lift out the beef, shred it with two forks and keep 200 ml of the cooking liquid.
- Fry the onion, peppers and garlic in olive oil until soft, then add the cumin and oregano.
- Add the passata, reserved liquid, shredded beef and olives and simmer for 15 minutes until saucy.
- Serve with rice, black beans and fried ripe plantains.
