  1. Heat milk, oil and salt until just simmering. Pour over tapioca starch and stir.
  2. Cool for a few minutes, then mix in egg and cheeses until a sticky dough forms.
  3. With damp hands, shape into small balls and place on a lined tray.
  4. Bake at 200°C for 18–22 minutes until puffed and lightly golden.
